ICYMI: We need a brighter spotlight on female chefs

According to the Institut de tourisme et d’hôtellerie du Québec, just 30 per cent of students enrolled in the school’s culinary programs are women. The same percentage applies to culinary applicants, and that number has been fairly stable in recent years.

The Michelin Guide may have got the message: in 2019, 11 restaurants helmed by female chefs were awarded new stars. In 2020, there were six. But six equals 10 per cent of new stars awarded, says Frédiani, “and 10 per cent for me is not enough.” Arellano, who spends most of her time running the catering company Maurín traiteur local & de saison and managing the shared kitchen space Centrale culinaire, says there’s a brighter light shining on female chefs these days, but there’s still work to be done.

Arellano joined the Association des Femmes Chefs when it began in 2017 as an outlet for monthly pop-up dinners with the goal of getting women to support each other in the kitchen. The group expanded to include servers, food photographers, bloggers, home cooks, entrepreneurs and other women in business. “The idea is we all work together,” says Arellano.

Chef Helena Loureiro says that since 2003, when she opened her first restaurant in Montreal, she has seen a greater interest among young women in becoming chefs, which means women are becoming more visible in kitchens. “There is more recognition and respect given to them,” she says. “In owners, it’s much more men,” she says. “Now, many more women dare to be entrepreneurs, but at one time it was more a man’s world.”

I don't know why we need a spotlight on any chefs, but if we do, let's spotlight the best.
