Taste influenced by differences in how alcohol and water molecules interact in warmer and cooler beverages

. Scientists were studying the molecular behavior of different concentrations of ethanol—also called drinking alcohol—when they discovered something unexpected: The surface tension of a mixture didn’t change linearly with alcohol concentration. Instead, it jumped in a stepwise fashion. Further analyses and computer simulations suggested these steps were created by sudden shifts in the arrangement of ethanol molecules.
