We waded through all the nonsense and set out to find the best chef's knives for home cooks at the best price. For our initial test in 2018, we tested 14 8" chef's knives ranging in price from $25 to $400. In the end, we named two winners, one Western-style and the other Japanese. For our updated 2019 test, we tested six additional knives—ones we had overlooked in the first round and new releases—against last year's top picks to see if the winners could defend their titles.
