Oils oxidize at high temperatures

It would be more accurate to say that olive oil is the least harmful of the available oils. That is very different from being 'healthy.'

WebMD continues to spout the conventional story on saturated fat. It shakes my faith in the other information it puts out.

To claim that olive oil is healthy is a false statement. At best it has a neutral effect compared to other, more harmful oils. Healthy foods can do better than neutral, they promote health. It would be better to leave oils out altogether.

What about extra virgin coconut oil that has 2/3rd MCTs

It oxidizes at high temps.
