Give pressed tofu a quick run through oil, cornstarch, panko, and sesame seeds, and put it in the oven. Ta-da!

Made the tofu tonight and, we all loved it. I paired it with Melissa Clark's Summer Squash, Coconut and Basil Stir Fry and udon noodles. The stirfry was lovely, but the tofu was the star of the evening and was devoured by everyone at the table. Loved the ease of preparation -- so much easier than panfrying the cubes. The tofu was nicely flavored from the marinade and had a wonderful crispiness. This dish seems very versatile. I can see pairing the tofu with so many different vegetables.

Continued...I also roasted broccoli and served all 3 in a bowl together. Recommendations on style of rice or type of greens to serve with this?I followed this recipe to the letter. The tofu turned out great. The Shitake mushrooms were burnt to a crisp after 15 mins in the oven at 400F. Bummer. I will try it again because I like mushrooms and the tofu was great. However I will roast the mushrooms separately first at a lower temperature.

Snack Mix-Style Sesame Sticks Recipe on Food52Sesame sticks are a great vice of mine: I'll strip the bowl of any before you have a chance to get a hand in there. But, luckily, while it'd be hard to make pretzel wheels, Fritos, or Cheez-Its (never Cheese Nips—never!), sesame sticks are the child's play of the DIY snack food world: If you can make crackers (and you can), you can make sesame sticks. (And yes, that means I should make a batch of my own to bring to the next snacks-centered event I attend—for everyone's sake.) These don't taste exactly like the kind you'll find in the bulk section of your grocery store (probably because they have 8 ingredients instead of 30 and they're baked, not fried), but they're pretty darn close—and they still tick off all the nutty, crunchy, salty boxes nevertheless. To Make Them... - Mix together a simple dough (I used Epicurious' 3-Ingredient Seeded Crackers as a guide) with whole wheat flour as the base. - Add buckwheat groats for crunch and, following Serious Eats' recommendations, toasted sesame seeds, ground turmeric, garlic powder, and salt. - Then, whisk together sesame oil, water, and honey and pour the liquid mixture into the dry ingredients as the mixer runs. - When the flour has disappeared and the dough has come together, roll it between two sheets of parchment paper, as thin as you can get it without driving yourself nuts. - Score it with a sharp knife or—fun—a pizza cutter. You can cut all the way through, but don't separate any of the stickies (the dough will be too sticky, anyway). then slide the parchment paper onto a baking sheet and freeze for an hour. - Brush the frozen cracker sheet with oil, sprinkle with more sesame seeds, and bake at 400° F for 15 to 20 minutes—the darker they are (without burning), the more flavorful and crunchy they'll be. L’Artusi’s Famous Mushroom Ragu With Fresh Garganelli Recipe on Food52My boyfriend and I are long-distance, so we get to see each other about once every three months. When we are together, we like to cook, explore whichever city we’re in (usually Berkeley or New York City, where we each live respectively), and spend a healthy amount of time vegging out on the couch watching Netflix (Chef’s Table, Parks & Rec, you know, the modern classics). While we try not to schedule out our time too strictly, there’s one tradition we’ve yet to break: date night. We take this quarterly date night very seriously, and spend weeks picking out a restaurant with the right balance of menu options (he's a vegetarian, so there’s got to be at least a few different choices for him), ambience (romantic, not stuffy), and budget (sometimes we splurge, sometimes we keep it low-key). For some reason, we always gravitate towards Italian food, and that helps narrow down our choices. Past winners have included Acquerello in San Francisco (a very worth-it splurge) and Lilia in Brooklyn (excellent and wonderfully priced), but there’s one dish I haven’t been able to stop thinking about since one date night from about a year ago: the mushroom ragu with garganelli at L’Artusi in New York City’s West Village. Tubular little bites of fresh garganelli pasta wrapped in a creamy, luxurious sauce of nothing-but-mushroom flavor. At the same time, it was meaty and hearty, filling enough to make me ignore the buttery cacio e pepe sitting across the table—and my boyfriend. The cherry on top of the ragu: a generous layer of shaved ricotta salata, a dried, salted ricotta cheese. It was love at first bite. I immediately wanted to know the secrets behind its silky texture, mushroomy goodness, and—whoa—completely vegetarian ingredients list. Spaghetti with Lemon-Parmigiano Sauce Recipe on Food52Let’s begin with some clarifying vocabulary: “Parmesan” is a style of cheese (like “cheddar” and “mozzarella”) and “Parmigiano-Reggiano” is the world’s best variety of this cheese, only produced in Italy, exclusively in Bologna, Modena, Parma, and Reggio Emilia. Its moniker is “the king of cheese,” and that is no hyperbole. Almost everything in Italy is finished with a fresh grating of Parmesan, except spicy foods and seafood dishes (try asking for cheese to top one of these dishes in Italy; it is more than likely that they will flat-out refuse you). It’s sweet/salty/nutty flavor is an undeniable flavor enhancer to so many savory dishes. But there is a big difference between Parmesans produced domestically (and in some non-Italian countries, like Australia and Argentina) are those from parts Italy’s famed Emilia-Romagna region. To understand the variables, I have highlighted the categories in which Parmigiano-Reggiano excels over its Parmesan peers: Time: Most Parmigiano-Reggiano is aged for 2 years or more (domestic versions are likely 6 months to a year). This prolonged aging process not only helps develop the cheese’s tell-tale nutty and salty flavors, it also helps create beautiful, crystalline clusters within the cheese (a transformation of milk proteins), which adds crunch and character. For Parmigianos aged for 3 years (called “stravecchios”), it is better to nibble it in craggily chunks as part of an appetizer or antipasto platter, so you get the full benefit of its textural superiority. Purity: Two words: “wood pulp.” Last year, that is what food scientists found mixed into tubs of pre-grated domestic Parmesan cheeses sold in the supermarket. I guess trees are cheaper than cheese, but when you buy a block of Parmigiano-Reggiano, there is no room for such flimflammery. Just 100% pure salty goodness. Jerk Chicken Burgers Recipe on Food52Switch up your summertime burger routine with these Caribbean-inspired chicken burgers. These burgers are an easy way to enjoy all the flavor of classic jerk chicken without having to wait overnight for the chicken to marinate. I am a heat seeker and love spicy food, so I usually use 2 Scotch bonnet peppers in this recipe (veins and seeds removed). If you want a less spicy version, use one pepper. The yogurt sauce and the cabbage slaw help balance the heat and cool the mouth.
