Five months after the first COVID-19 cases were identified in New York and restaurants around the city were forced to shut down, MeMe's Diner—along with other small food businesses—is learning to live in a semi-permanent state of reinvention.

Along with line cook, Dori Santos, the three are the only staffers currently working at MeMe’s, in what has truly become a family operation: MeMe’s is named for Clark’s grandmother, or MeMe, who offered congratulations via phone after longtime partners Clark and Spena recently got engaged on a trip to Provincetown. “She’s ecstatic,” says Clark. Willis is engaged as well, tocofounder Katie Zanin.

As a recent transplant to New York from Provincetown, Santos was not eligible for unemployment benefits, so MeMe’s found a way to keep her on staff: “We needed to be sure Dori had some source of income,” says Willis.The next few months were a blur of different modes of operation, from delivery-only service on Caviar to a complete closure for renovations in April and a partnership with Queer Soup Night in June to offer free food to protestors.

about food service. “The hardest part is you don’t know what to expect on any given day,” explains Clark. “You can only serve outside, in a summer where it’s pouring more rain than ever, then you get four days’ notice that you can suddenly start serving, then they change the laws, and you’ve spent hundreds and thousands of dollars on outdoor-dining stuff.”

“I’ve worked at a lot of restaurant jobs where you work really hard and you feel like it’s unappreciated,” agrees Santos from across the room. “I’ve been really thankful for the fast friendship I’ve gotten through MeMe’s. It’s a place where I always feel safe and supported and encouraged to provide input on food.”Despite the built-in intimacy of their small staff, Willis and Clark are continually challenging themselves to do better.
