Opening week for a New York restaurant is a full-tilt dash, as Sam Talbot attests during a rare moment of downtime. “I’m knee-deep in it,” the chef says, detailing the physical toll that a round of 166 biscuits can take.

, his new spot set on a prime corner in Greenpoint, has just started welcoming in its first diners, and if anyone can handle the stress, it’s Talbot: A seasoned kitchen veteran and aalum, he keeps his cool with regular rounds of meditation. “Most people would say twice a day, but I try to do it three times, because it’s just madness, you know?” he says with an easy laugh.

Talbot is refreshingly vocal on matters of health, as quick to talk up the benefits of yoga as he is to discuss the outreach efforts led by, the diabetes-awareness organization he cofounded in 2015. Which might make the top-line menu item at Pretty Southern—fried chicken—seem out of character, especially at this resolution-minded time of year. It isn’t.

There are two takes on biscuits , mac ’n’ cheese , and the ultimate comfort food, chicken. The fried version, finished with lemon, comes out “light and clean—it has a bounce to it,” he explains. And then, taking a page from the wellness-cuisine lexicon, there’s “fried-free chicken,” which is brined and marinated before being spun on the rotisserie and served in a cast-iron skillet.

Talbot’s virtuous example is one to follow in the home kitchen, starting with a top-to-bottom pantry sweep. Strong flavors are key—he has an “arsenal of vinegars,” he says, along with homemade hot sauces.
