Josh Niland has championed fish lip-to-tail eating and pushed the traditional butcher shop out to sea, and now the toqued chef is set to dish up the seafood equivalent of a charcoal chicken shop.

Josh Niland told Good Food he's long dreamt of reinterpreting the charcoal chicken shops found on every street corner. The chef wants to serve"loads of different cuts" of fish from the grill and rotisserie. Vegetables will be grilled, and there'll be plenty of salads.
