Add the onions, carrots and bay leaves to the pot and stir-fry for 5min. Add the garlic and ginger and fry for another minute.Add the chutney, vinegar and stock and bring to a boil. Add the potatoes and simmer over medium heat for 15min. Ensure that you stir every 5 minutes. Add more water if needed.Add the corn flour mixture and stir continuously until the stew thickens. Season with salt and pepper if preferred.
