And it’s never been a better time to make a weekend trip to eat Shafi’s Pakistani-inspired Texas barbecue.

on smoked meat — and serving raita instead of barbecue sauce — is his way of combining Pakistani flavors with traditional low-and-slow Texas barbecue techniques. All of Sabar Barbecue's sausage is beef because owner Zain Shafi doesn't eat pork for religious reasons. The seekh kabob sausage is one of the regular menu items.Shafi swaps the usual mac and cheese, potato salad or coleslaw for fruit chaat, daal chawal and kachumber salad. He’ll happily explain the ingredients, flavors and significance to his culture. It’s a delight.

Sabar Barbecue's menu will always include lamb ribs, brisket, turkey and sides, said owner Zain Shafi. He might add monthly specials.Shafi learned from the team at Goldee’s, and it shows. He took a Goldee’s barbecue class for $1,000 in 2019, then hung around during the pandemic, offering a hand whenever the team needed help. In Shafi’s free time during the COVID-19 pandemic, he “fell down the rabbit hole,” trying to make food as good as theirs at home.
