Chef Junior Borges worked for several years as the vice president of culinary for The Village in East Dallas following a multi-million-dollar renovation. His Brazilian-American restaurant Meridian is the crown jewel of the complex. Reps say Meridian will remain open even without its chef-creator, who left The Village in mid-October 2023.— 20 years in Brazil, 20 years in the United States, all on a plate. Without him, what will Meridian become?It isn’t clear what might happen next at Meridian.
“We had a lot of people giving us great feedback. Some said they’re enjoying the restaurant more,” Borges says of the four-course menu. “But overall, there was this idea that ‘I can’t choose.’” The restaurant still had a la carte options, but some felt Meridian was losing its compass.Borges also says he felt the development needed more marketing and exposure and calls the location “challenging.” The Village is east of Central Expressway and south of Northwest Highway.
The restaurants, none on major thoroughfares, are easy to get to. But only if you know they’re there. Borges confirmed that he’s looking for new job opportunities.
