Any hurdles the cake presents can be easily jumped over. You may look at the recipe for O’Brady’s spice mix, see the words “bee pollen powder,” and close that tab with the quickness. But, this is not a time to be strict about ingredient lists. You can leave the pollen out; likewise, you can nix the dried orange peel. The rest—cinnamon, cardamom, fennel, coffee—you probably have on hand, and if you don’t, well, just do what you can. At the very least you can stir in some coffee grounds.

It’s a bold streusel that is softened by the sweet, citrusy cake that surrounds it, and taken as a whole the dessert is both brazen and subtle, loud and quiet.

Bee pollen is never in my pantry. At first, I thought this was an April Fool's joke, but nope, there really is bee pollen as part of the filling recipe, with no substitutions suggested.
