The word "porridge" may feel old-fashioned—maybe you'd rather say "oatmeal"? Oatmeal is a type of porridge, which is really just any kind of cracked, rolled, or whole grain boiled with water or milk into a thick mush. I'm calling it "porridge" because I don't always make it with oats; brown rice, quinoa, millet, cornmeal, and other grains all make great porridge ingredients, in addition to or instead of oats.
This trick also comes in handy when feeding a crowd for breakfast. I recently hosted a group of 10 for a weekend at my family's lake house in the Pocono mountains. Before going to bed that Friday night I pulled out the slow cooker and tossed in steel-cut oats, brown rice, chopped apples, and fresh ginger, along with a sprinkling of cinnamon and a handful each of golden raisins, flax seeds, and sliced almonds, and then filled it to the brim with water and let it cook on low all night.
