Originally started as a pop-up project out of Tartine where Beitcher could experiment with sourdough and naturally leavened whole grain doughs, his bagels turned into much more as baking became everyone’s obsession during the first year of the pandemic. At the brick-and-mortar, Beitcher is upping the ante by offering pastries in addition to his bagels.
“We’ve had so many people poke their heads in to say hello, introduce themselves and welcome us into the community,” Beitcher said of opening up shop at 646 Irving St., squeezed between Naan n Curry and Amazing Fantasy, a comic book store.Photo courtesy of Midnite Bagel One of the more unique options from Midnite Bagel is a buckwheat and black sesame bagel, which is not found at many other bagel shops. Pastry options on opening day are slated to include a coffee-glazed currant scone and a banana and buckwheat muffin.
