Light and casual is a common theme on New York City restaurant menus, as chefs adapt to outdoor service in phase two of the reopening and look ahead to phase three, when indoor service is set to resume

When outdoor restaurant-dining started as part of New York’s recent phase-two reopening, Nick Pfannerstill, chef at Mother’s Ruin, a cocktail bar and dining spot in Manhattan’s Nolita neighborhood, realized he had more to worry about than social distancing and table placement.
