Love love love this dish. Peanut sauce is beautifully balanced, especially with the cilantro and cucumber. We don't have Sriracha so I substituted for 5 tsp of Sambal Oelek. Also used Haiga rice instead of jasmine, no change to liquid amount or cooking time. Rinsed the rice, used just water and the rice tasted incredible. I wouldn't change it for chicken broth. Gorrrrgeous dish. Had it for breakfast the next day.
I find that when I use a smaller quantity of rice and slightly a little less liquid this is rectified. This is mostly to do with the size of the pot being used and how snug the chickens fit in the vessel. I also deglaze the pot with some shaoxing wine before popping the shallots in and find this adds extra flavour :)Absolutely delicious, 10/10! I followed the recipe exactly and licked my plate! If you add a little oil to the pan, place the chicken on it and turn it on....
