What's not to like about a fried egg and avocado toast?

When I don't feel like whipping up a"real" guacamole -- mincing, mashing, etc. -- I just throw a little home-cured lemon into mashed avocado and call it breakfast . —What's not to like about a fried egg and avocado toast? Together, they make a pretty rich combo. Perhaps more suited to a leisurely weekend breakfast for two, this is an indulgence that should be given time to enjoy .

I had to rely on store-bought preserved lemons, so a little mincing was required of their tougher skins, but they did all the work when it came to seasoning the"guacamole." Their brine added salt, while the lemon took care of the acid -- a nifty trick I will no doubt use in the future. A topping of Aleppo pepper continued the"Moroccan" theme. Bonus points for the fast and easy guacamole preparation.

The Food Lab's Ultra-Smashed Cheeseburgers Recipe on Food52These are a pretty straight-up, classic cheeseburger—except that they defy one of the most notorious myths of burger-making: to never smash the patties down while they're cooking, or the juices will run out and they'll go dry and tough. Sheet-Pan Shrimp Scampi for One Recipe on Food52This weeknight dinner for one is inspired by an incredible garlic shrimp I had at a Chinese restaurant in Hawaii. When roasted at high heat in a quarter sheet pan like this, marinated shrimp cooks up gorgeously and begins to caramelize in its own juices, creating a sauce that's made even saucier thanks to a last-minute pat of butter and spritz of lemon juice. Though the usual scampi players are present (garlic, lemon, and red pepper flakes), I went with mirin instead of white wine and soy sauce instead of salt, lending it some of that Waikiki palate. I anticipate that many will wish to skip the optional pinch of sugar, but I implore you not to; for me, anyway, this dish didn't fully come together until that one pinch. But to each their own: That is the point of cooking for yourself, isn't it? You can tailor a recipe to your predilections. As for my predilections, I like to eat this straight out of the pan with a bowl of white rice and an ice-cold beer, just as I had it in Hawaii.
