Sweet, summertime corn is here. And with it: corn milk.

, and that sweetness balances the savory chaat masala and spicy chiles and ginger. Also, corn milk is starchy. When you make a dressing with it—raw—as in this recipe, it gets creamy and clings to every kernel.thickens up. Sohla says she makes creamed corn without any actual cream, relying on the corn milk to get the job done.

“If you don’t scrape your corn, you’re losing a lot,” Sohla says. Here’s a tip:Shave off the flavorful, juicy corn kernel tops and leave the fibrous root behind. That’s the stuff that gets stuck in your teeth anyway, and it’ll leave more material to make corn milk with. Also: It’s important to use fresh, in-season, good corn for this to succeed, she adds. The stuff in grocery stores mid-December is mostly likely too dry and sadly bland.

Unsubscribing until you pay people of color the same as Caucasian. I think the rest of your staff, if they care about this blatant racism, should quit or strike until you pay fairly. bonappetit

Why do you only pay your white talent what they're worth?

Man I would love to watch a video of Sohla making that food. Oh wait, you weren't paying her enough for us to get that content

Dont come back if y’all are gonna stay racist. U can keep your videos thx

Do you milk corn the same way you milk employees?

Would be aa even better summer if you started treating all your workers fairly.

No one cares about corn milk. We all saw what you did - and what you are doing in regards to your BIPOC employees and those who tried to take a stand.

If you aren't paying your employees will you still have employees?

Hey, when are you going to pay your BIPOC staff equally and fairly for their work?

Hmmm don’t see any dark meat in the dish. On brand I suppose.

If you arent paying BIPOC fairly, are you even worth attention?

Step 1: Milk corn like you would milk employees for their work and not pay them for it

Anyways this recipe and presentation is amazing thank you Sohla

Cowards

First cooking magazine I ever subscribed to and then I found out how you treat minority workers like shit.

if you don't pay your employees what they deserve, are you even human?

Pay your employees of color fairly

HAHAHAHAHA tried to slide the BIPOC writing in under a white hipster headline this time, I see

Why didn’t you back-pay your BIPOC-Employees? Shame on you BA!!

At least the food styling is on point (thanks sohla)

Pay your employees fairly. Or at least whatever employees you have left, considering how many have requested their release.

You know what'd be sweet? Paying your employees fairly.
