Crispy fried cauliflower, garlicky greens, salty-sour peppers, and gooey provolone cheese.

Okay, this is amazing. Like the best way in the world to cook cauliflower. And I love the stuff. I usually roast it with cumin and black mustard seeds. Now, I do this. I had my first batch as a cauliflower sandwich , with the kale and garlic & provolone in the middle. My finicky daughter, who likes cauliflower only raw or in soup, and only in small amounts, couldn't stop eating it. I made more plain cauliflower for both of us.

Re the oily: make sure your pan is really hot, consider a little bit of breading , and don't worry about using enough oil for it to crawl up the sides of the cauliflower. It's soo good whether it gets cruncy or not...I have got to try a little breading on this—sounds like a good idea. Glad you and your daughter like this! I've been experimenting with frying broccoli too and it's a little trickier because of the delicate flower to tough stalk ratio, but still tasty.

Scrambled Egg Muffins Recipe on Food52In my quest to simplify, I have been considering an all inclusive breakfast muffin. I used to make a version that involved layering meat, veggies, and cheese in muffin tins, drizzling with beaten egg, and baking. They were decent but seemed a bit spongy and did not freeze well. I also had fond memories of a quiche-like muffin from Specialty's bakery in SF that seemed to have cornmeal or something more substantial to hold it all together. In my searches for something similar, I came across a recipe on bhg.com that scrambled some eggs and folded them into a cornbread batter; it seemed like a great starting point. The flavor profile I wanted in these muffins was inspired by a breakfast we made In the midst of summer -- an odd-sounding, but delicious combination of browned sweet corn, eggs, cheese, and maple-caramelized ham. For the first batch, I followed the original recipe pretty closely, adding just the ham, corn, and more cheese, and reducing the sugar. They were really good and it seemed a great method for suspending any combination of meat, veggies, and cheese. For the next batch, I added an extra egg to the scramble and a bit of baking soda to help provide lift, as well as a roasted chile. I ended up with what turned out to be an amazing breakfast muffin. I should add that I also made this in a loaf pan and cut it into slices. It cooked a bit longer and came out great.

Matilda, Maple, and Garlic Pork Shoulder with Crispy Skin Recipe on Food52My grandmother (yes, I'm mentioning my grandmother again) used to cook her ever-present, giant ham by sticking it in the oven and pouring ginger ale over it every once in a while, as if it had won the Super Bowl. I decided to use a bottle of Matilda beer, a lovely fruity malty ale made here in Chicago, by Goose Island, with maple syrup for some extra sweetness. You'll probably have to special order the rind-on cut; I had a hard time getting one in Chicago, a.k.a Meatland. Strange. Eggplant Parmesan Recipe on Food52This is my Nonna's recipe and most of the ingredients came from her beloved garden. She used to fry the eggplant in egg and flour, but I only use flour and fry them on baking sheets in a hot oven. I always thought the egg batter soaked up too much of the sauce.
