Elizabeth Johnson, owner of Pharm Table, said he most difficult part of running a restaurant is not the food. Rather, it’s the staffing, the vendors and the economies of scale. “The problems we face are more logistical or human resources-related,” she said.
Johnson has had a wide-ranging career. Born in Honduras, where her American parents had a timber ranch, she entered the culinary world when she took a job at a bakery in Oxford, Mississippi, run by famous pastry chef Martha Foose. She had the idea to start Pharm Table during a meditation retreat while working at the Culinary Institute of America in San Antonio. She left the retreat “with this very clear vision that I needed to quit my job and heal people with food,” she said.
