This Persian rice dish, known as kateh gojeh farangi, is the ideal late summer comfort food.

Kosher salt, freshly ground black pepper2 medium tomatoes, halved crosswise, seeds removed, coarsely chopped2 Tbsp. unsalted butter, cut into piecesHeat oil in a medium pot over medium. Add onion and cook, stirring occasionally, until softened and golden brown, 8–10 minutes. Add garlic, season with salt and pepper, and cook, stirring occasionally, until garlic is softened and onion is lightly charred around the edges, about 5 minutes.

Stir tomato paste into onion mixture and cook, stirring often, until slightly darkened in color and beginning to stick to bottom of pot, about 3 minutes. Add tomatoes and cook, still stirring, until tomatoes burst and mixture starts to thicken, about 5 minutes. Add rice, cinnamon, and turmeric and cook, stirring, until spices are fragrant, about 30 seconds.

Pour 2¼ cups water into pot, give the mixture a stir, and bring to a boil. Reduce heat to low and cover pot. Let steam until water is absorbed and rice is cooked through, 20–25 minutes. Remove from heat and let sit 10 minutes. Uncover, add butter, and fluff with a fork.

That looks delicious. Making it today!

This doesn’t sound like an apology or explanation.

I hope you are compensating your contributing members of color equally.

How do you and CondeNast just ignore all questions about your discriminatory policies and feel good about posting about buttery rice? Don’t you feel any guilt?

Why didn't you back-pay your BIPOC-Employees? Shame on you!

shame on you BA and all the very silent white editors!!

This looks delicious — I love all Middle East food. Most delicious Persian food was in Doha, Qatar. I felt like I was in Aladdin’s cave. qatarairways 💖

Do you recommend that trash brand Rumi Spice for this recipe?!?!? No idea why you continue to peddle their sub par spices that are founded by US soldiers trying to profit from an area that they have brutalized & ravaged. WhitePrivilege

Grilled Naan and Tomato Party RecipeSnatch up summer’s last big, juicy heirloom tomatoes and join me for a grilled naan and tomato party! Grated raw tomato and ghee-sizzled nigella seeds create a base for pretty-in-pink raita and do double duty smeared on the naan during grilling. Meanwhile, big tomato wedges get tossed in spiced yogurt before charring on the grill. The dough for the naan is sticky and soft, but don’t be tempted to add flour. A supple and moist dough is key to a tender, bubbly bread. Just keep kneading and the dough will grow bouncy and smooth. If you haven’t worked much with yeast, don’t fear! Flatbread is a forgiving place to start playing with fermentation. Compensate your BIPOC staff first Bon Appetit! How bout instead you pay your BIPOC employees/contractors equally? How bout we try that for dessert? It’s the audacity for me smdh
