It's a sunny day in Birkdale Village and people are enjoying a glass of wine outside one of the many bars along Liverpool Road.
"It needs to be good weather, it's like with anything really. Once the good weather comes it's buzzing along here. A lot of people like the quaintness of it still being a Victorian village." The restaurant opened in 2009 and has since been mentioned in the Michelin Guide which described it as a "bustling" place to grab food. Just a few doors down is Barrique - a restaurant and wine bar that's hosted live music, a quiz night and a Charlotte Tilbury masterclass in the last week alone.
Next door is Birkdale Cheese Co., which has sat at the heart of the high street for 45 years. The cheese shop was taken over by Mark Moss and John Clarke three years ago after it came onto the market "by chance". "It's been here for 45 years as a cheese shop. We took over three years ago and it was just a little bit tired. It needed a little bit of a revamp, which is what we set out to do.
"I think the individuality is what people crave." Since Penny opened her first shop 12 weeks ago, she said Birkdale has "become more of a destination for people" with different restaurants to choose from.
