Behind the scenes inside one of Preston's most lavish fine dining restaurants stands the chef that helped the eatery gain its third award.
"I actually did sign up for up but he dropped out so I had to carry on on my own. From there, I began working in little hotels, eventually went travelling as you do when you're younger but when I came back, I knew I wanted to be serious about this. Rikki made the journey up north and joined the 263 in November 2021- the first time the restaurant was able to reopen after numerous lockdowns. The team used the reopening to offer a relaunched version of their menu and dining experience.
Last week, the team celebrated achieving their third AA Rosette in four years after being first opened in 2019 by Mark O'Rouke. The team now has Lancashire-born Oli Martin onboard as chef director too.
