Stefano Azzaro, the owner behind exciting new venue, the Old Fish Bar on Coustonholm Road in the south side has revealed what people can expect from the former chippy site.

If you've happened to walk along Coustonholm Road in the south side you may have noticed the black shuttered frontage replacing the spot where the popular Guido's Chippy used to be.

Already packed with over 200 bottles of Scottish whisky and gins, as well as rums from around the world and other premium spirits, the entrepreneur hopes to have everything in place to create an enticing and evolving menu of cocktails that changes each month. A Shawlands native and originally from Sicily, Stefano said: "I've been a bartender for over 15 years, in my career I've worked in some of the most important cocktail bars in the world and collaborated with many brands. In 2019 I moved to Glasgow for a short adventure, but in the end, I stayed here to try to open a cocktail bar.

Stefano said: "It will be a real cocktail bar, not a restaurant with an integrated bar; but in reverse, the Old Fish bar is a cocktail bar, which offers some appetisers to eat inside, the food will all be small portions to be eaten in one bite, and based on ingredients from the sea, such as the best fish, shellfish and seaweeds."

He now hopes to hire a talented bartender to work along with him to create their cocktails and serve customers, with Stefano saying: "I'm looking for someone who has a lot of passion for this job also because I'm aiming high. I have also started organizing guest nights with some bartenders from all over the world.
