Eaten either dry or in a soup, the noodles in Sang Nyuk Mian is of a texture closer to that of Japanese soba noodles.

When it comes to hawker food in Sabah, the most famous is raw pork noodles or Sang Nyuk Mian in Hakka, which is the most spoken Chinese dialect in this part of Malaysia.

In Kuala Lumpur, the pork noodles are prepared with either kuey teow, yellow noodles, meehun, or mee suah. There are two versions sold here – the first is “kon lou” which is essentially a dry version in which the noodles are mixed with a dark sauce. A bowl of pork soup is served on the side.
