“The cooking isn’t as much of a passion as the eating,” he laughs. “I mean, I like taking the time to make a nice meal and enjoy it.”Heckkner, of Summerside, conceived the idea for his new business around nine months ago. Standing in his under-construction restaurant in the middle of the County Fair Mall, he joked that he’s been pregnant with the project and is “due to have a baby here in the next month or so.
“The opportunity came up for myself to build a business on my own,” says Heckkner. “So, I decided to step up and give it a try.”While working behind the scenes in preparation for getting his new shop up and running, Heckkner is discovering his entrepreneurial spirit. Kaley O’Brien, executive director of the Greater Summerside Chamber of Commerce, is excited to see a new restaurant opening in the city – especially one that brings new flavours to the area.
Still in the middle of creating the menu, Heckkner is also looking for ways to accommodate a variety of diets, like vegan, vegetarian and gluten-free.To help, Heckkner has also been in touch with a Mexican chef based in Ontario who will show him the ropes and work with him on the recipes. In mid-November, he flew out to meet her for a few days of training in her kitchen and finalizing the menu., Heckkner has seen heard tons of responses from people who are eager for the day the Taco Spot opens.
