A renaissance is coming. It will take 'years' to restore Sydney's nightlife to its former glory, says Justin Hemmes. But with lockout laws to be removed, now is the time to seize the 'momentum'

Merivale boss Justin Hemmes, whose Sydney hospitality empire totals about 75 venues, says it will take "years" to restore the city's nightlife to its former glory.

Mr Hemmes says there has been a definite "shift in culture" that prioritises quality food, especially for younger consumers. "They're so into their food," he says. "Apart from porn, I'd say food is probably one of the most posted images [online]."The same sophistication can be seen in how people drink, he says. "It's not just about having a bourbon and coke any more. They care what tequila it is and where it's from.

Mr Hemmes emphatically rejects those critics. "They clearly don't go to our venues because not one of them is the same - every one of them is so different in offering and cuisine and scale and music," he says.
