The rising cost of produce is forcing changes to some restaurant menus and slowing the economic recovery for growers of small garnishing herbs in regional Victoria.

His business partner at B and B Basil, Shannon Radelaar, said increased competition as well as restaurants treating expensive garnishes as optional had hurt sales.“Microgreens and edible flowers, and those optional-type things … they’re generally the last thing they’ll put on the plate or the first thing they’ll take off,” he said

“We’ve had a food system that’s been geared the way things used to be and now there’s disruption that’s been unpredictable,” Germano said. “Prior [to] COVID, it was a very different game. I think that’s come down to the consumer, how they’ve changed the way they go about their lifestyle,” Palma said. “It comes down to restaurants providing value for money on their products ... it flows back to us as agents and growers.”
