At Mano a Mano, their focaccia di Recco is lightly brushed with olive oil and finished with rosemary before it’s baked, Psaltis said.“It’s shareable,” Chen said. “Or it’s thin enough that one person can actually eat the whole thing.”“Over the years we’ve been fortunate,” he added. “Hsing and I both have traveled to Italy and spent some time with great artists who make things by hand.”“There’s a really beautiful golden, classic carbonara on the menu,” Psaltis said.
The wine list will comprise 20 or so mostly Italian wines, Psaltis said, some by small producers, at an accessible price point. You can spike your own espresso with amaro, Psaltis said. “In the middle of the day, it’s one of my favorite things to do.”“These Italian sweet cream buns,” she said. “They’re light like a brioche, but filled with whipped cream.”She’s planning to fill them with different flavors of cream and jam. The pastry chef has begun with raspberry rose maritozzi, and may add pistachio plus strawberries and cream.
