Q: How significant, from a competitive point of view, was it that you made the only plant-based dish in the competition? What do you think were the pros and cons of not making an animal-protein-based dish? A: We get the comments about the complexity and uniqueness of flavours most often. It is the application of ferments such as green tomato brine, koji, preserved rhubarb and cured maitake mushrooms that makes the dish special.
