Galarde, the chef of the duo, was finishing up her culinary arts apprenticeship in Alberta and debating what her niche as a chef would be. When she stopped by a Chinese restaurant selling bao the idea came to her: a Filipino twist on bao. For instance, crispy pata is a popular Filipino pork dish made from pork leg, and is traditionally deep fried to form a crunchy skin over the exterior. At Bao Mama, they feature a “Crispiest Pata” bao made from pork hock, which Galarde said is a great option for people who enjoy the usual pork belly bao.
“Everybody loves fried chicken, look at Jollibee,” she said — fried chicken is one of the beloved chain’s hero menu items. “I pursued her literally like how a boyfriend or girlfriend would and said ‘So, when can we do this?’” said Buenaventura.
