Resident mixologist Steven Tseng says these spirits give him the flexibility to play. “Knowing our guests have travelled the world, I love the challenge of presenting something new that also showcases Toronto,” Tseng says. “It’s important for us to remember that when a guest travels here, they want to get a taste of the city’s culture and take it home with them.”
While fruity cocktails may remain ever popular, Tseng is excited to champion the herbal complexity of vermouth and intriguing bitterness of amaro. The amaro also complements the bar’s Mediterranean vibes — all hanging plants, colourful ceramics and warm desert tones — and is at the heart of Skylight’s signature cocktail, the High Park, providing honey, vanilla, licorice and allspice notes.
