The bright and fresh flavors of Mexico’s Baja region are closer than you think — if you know where to look in North Texas.Every morning, Jesus “El Chicharo” Rojas chops tomatoes, onions and cilantro. He squeezes lemons and prepares sauces and condiments for seafood cocktails filled with shrimp, octopus, crab and fish.is both simple and complex. He sells cocktails, aguachiles and ceviches, all fresh and freshly prepared Tijuana-style, from a trailer he hauls behind a van across North Texas.

Located in the northwest corner of the Baja of California, Tijuana carries the catchphrase in Mexico of “aquí empieza la patria,” or “here begins the homeland.” Alongside its neighbor, San Diego, California, the area marks one of the busiest border crossings in the world, with more than 300 million people passing back and forth every year.

The business is currently focused on the Hispanic market, but Rojas is learning English, readying himself to introduce American palates to his Baja-style cocktails. “The moment you’re eating this, all the flavors explode in your mouth, and I think everyone can enjoy it because it’s authentic,” Rojas said. “This is Baja-style: all fresh, all delicious.”

Family ties factor heavily into Mariscos El Chicharo. The business borrows its name from Rojas’ own nickname, which means pea.
