He anticipates a potential price increase for such dishes as well. Saloni Firasta Vastani, a marketing expert at Emory University's Goizueta Business School, shares a similar outlook. She predicts that if egg prices continue their upward trajectory, poultry prices will likely increase both in grocery stores and on restaurant menus. Vastani emphasizes that if the avian flu remains uncontrolled, we could witness a further surge in poultry prices. However, she believes that these surcharges are unlikely to become permanent. Instead, restaurants will be compelled to adapt and explore alternative ingredients to replace eggs in their recipes
