Huge oysters emerge from warm waters of UAE

Pearl oysters were once a source of wealth in the United Arab Emirates. Today a new type of oyster is flourishing in the Persian Gulf -- the edible kind.

"They are filter feeders," says Murray."They very much take on the characteristics of the local environment."Since Dibba Bay is situated in open water along the Indian Ocean, it consistently receives clean currents and is the only farm along the coastline, meaning oysters don't have to compete for food.

"You think of oysters as quite glamorous," says Murray."But with the farming, it's quite down and dirty. It's quite rustic and there's a lot of work involved." As they all grow at different rates, Murray's 16-member team periodically takes them out of the water and arrange them into different nets based on size to prevent larger oysters taking food from the smaller ones.
