You don’t have to be a pro chef to cook delicious food, but it helps to have the right tools and know-how. When it comes to cooking with cast iron, it's important to properly 'season' your pots, pans, skillets and comals. 'Seasoning' or 'curing' your cast-iron cookware means creating and maintaining a protective layer of 'polymerized,' or hardened, fat on the surface, kind of like the enamel on a tooth.

We asked Maria Flores, owner of San Antonio-based Hess Street Foods and first-place winner of H-E-B’s 2024 Quest for Texas Best competition. She started her career in food at a winery and brewery in 2000, but she got familiar with the comal long before that. “I’ve been using cast iron since I started learning to cook,” Flores said.

Make sure your skillet is well-seasoned Flores said it’s important to make sure your cookware is cured and well-seasoned. She recommends coating your cast iron in a thin layer of neutral oil, like canola, and placing it in the oven at 450 degrees for an hour to make sure the seasoning on your cookware is cured.
