CBS is deviating from the specifics of the trip, but Young Sheldon season 6 is moving forward with the narrative.

The episodes are titled "A Romantic Getaway and a Germanic Meat-Based Diet" and “A Tornado, a 10-Hour Flight and a Darn Fine Ring” and will revolve around the events leading up to their departure and the immediate aftermath of that.
Young Sheldon season 7's return has already been confirmed. If it is indeed the show's final outing, then CBS can find a way to bring back Sheldon to Medford, even for a limited time only. The Big Bang Theory prequel still has some big plot lines to tackle, and that includes George's unexpected death.
At this point, it's difficult to say what the future holds for Sheldon after his trip to Germany. Young Sheldon season 6 is focused on setting up the finale first. While The Big Bang Theory prequel isn't making a big deal out of this, the socially-inept genius is also set to graduate from East Texas Tech before the year is over. Whether this will be even referenced is uncertain at this point.
