Lionel Boyce Marcus Brooks - Pastry Chef Close Played by Lionel Boyce , Marcus originally started as a baker, making the rolls for the sandwiches that The Beef would sell. Thanks to the encouragement and mentorship by Carmy , he advances his title to Pastry Chef. Before his title upgrade, he is consumed by the idea of making the “perfect donut,” which causes some tension between him and Carmy during an extremely successful moment.
