by SBG San Antonio Staff ReportsEgg prices are up which is typical for the period prior to the Easter holiday, but still lower than what consumers paid in February.
While egg prices have indeed risen recently, David Anderson, Ph.D., AgriLife Extension economist, assures this is a typical trend leading up to Easter. "We're producing more eggs than last year," he explains, "but Easter's earlier this year, so prices are rising a bit sooner."The holidays naturally see a surge in demand as people buy eggs for cooking, baking, and the classic Easter egg hunt. This, not any shortage, is the main reason for the price bump.
While some data showed prices peaked at $3.29 per dozen in February, Dr. Anderson anticipates prices to settle around $2.99 per dozen for Easter this year, compared to $2.74 last year. However, he advises against waiting until the last minute: "Don't risk empty shelves if demand is high. Especially if you plan on using real eggs for your Easter egg hunt!"
