A good cleaver can last a chef’s entire career. That was true for my mother, who helmed our family’s Chinese restaurant for more than 20 years. I watched her slice and dice vegetables, fillet fish, break down whole chickens, and crack bones with her Dexter “Chinese Chef’s Knife.” Her cleaver had a round hardwood handle with four grooves that helped with gripping. I can still hear theof her chopping and the smack of the flat side of the 8-by-3-inch blade on garlic cloves.
Each Dexter cleaver is inscribed with the Dexter name in English and in phonetic Mandarin characters. Also in Mandarin are the characters for “Chinese kitchen chef’s knife.” Imitators have copied the design down to the Mandarin inscription. I have both a modern-day Dexter cleaver and an imitation. The imitation lacks the Dexter inscription in both English and Mandarin. And the real one is a heavier carbon steel.
