: On this week's Special Sauce, we talked to Blue Hill executive chef and co-owner Dan Barber about the huge changes being brought about in the food culture by the COVID-19 pandemic. The startling conclusions he came to were the result of a survey he and his team sent out to more than 500 farmers. Unsurprisingly, the responses from the farmers made it clear that the pandemic would have catastrophic consequences for many of them.
And now in COVID, we understand that it is absolutely critical and that we are looking at the equivalent of a tsunami come ashore, where we're watching it come. And the problem is that there are crises all around us right now that are real crisis and that this impending outcome of the COVID crisis feels far away, even though it's not and part of the reason we did this survey is to bring consciousness to it.
