I made this last night with a few changes, skipped mint and cooked squash with tomatoes and used cavatelli since that is what was in my pantry. DelishThis is very very good. I wish the sauce was bit thicker to adhere to the rigatoni more. I suggest a textured pasta with this dish. That being said WOW. Serve this to anyone you want to impress. I sauteed fresh mushrooms and shallots then, added Hot Italian Sausage followed instructions after that.
As others have indicated, I'll make a bit more sauce next time.Excellent! Added some thin-sliced onion and minced garlic once the sausage rendered it's fat. Otherwise, made it exactly as written. Really enjoyed it. A very unique and different taste. Will make it again.I made this for 2 of us with a few adjustments: 8 ounces of pasta , about 14 ounces of sausage before removing them from casings, added about 1/2+ cup of diced onion.
