Build up the savory, satisfying flavor of umami in this mac and cheese by using just ¼ cup of white miso paste.

Sadly this recipe didn't work for me. The miso was a nice touch but 1 c. of breadcrumbs drowned out the recipe. They never browned, and overpowered any creaminess or cheesiness. I used regular breadcrumbs, not panko, but not sure that made any difference.agree totally. interestingly, it seems 50/50 on this page with creaminess factor. mine also turned out dry. i also didn't even use the full cup of b-crumbs and felt it was way too much :-.

This recipe makes me want to try miso to accentuate the cheese flavor in other dishes, and maybe reduce the fat calories without sacrificing calories. Thanks!We were not impressed with this recipe. I used 2T of miso. The casserole went into the oven pretty wet but came out very dry and kind of bland. I prefer Martha's Macaroni & Cheese 101 recipe.I use hers also with some add ins like bacon or veggies. This one has a similar method but lacks something with just the one kind of cheese.

Oven-Braised Chicken Stew, Hungarian-Style Recipe on Food52More weeknight dinner than weekend project, I worked this up as a less labor-intensive vehicle for the flavors in my Hungarian Meatballs recipe, which is admittedly a pain in the butt to assemble, although I think the payoff is ultimately worth the time. This recipe splits the difference between that and chicken paprikash, and while my research didn't turn up an exact precedent for this preparation, I did find that it's somewhat similar to a beef and pork stew called 'Marosszéki heránytokány' in George Lang's 'Cuisine of Hungary' (New York: Bonanza Books, c. 1971; p. 280 in my copy). Thickening the stew with flour and/or sour cream at the end of cooking is optional. You can omit both if you want. Alternatively, leave the sour cream out of the stew, but serve it as a garnish.
