MetaMask will start collecting user IP addressesUsers can, however, opt-out of IP collection by using a different RPC within MetaMask. Good project You can bypass this by not using builtin chains. Any custom rpc should bypass this. Also you can bypass this by running your own node and using that as your RPC So what is a good (non-infura) RPC to use in MM if you are not running your own node?
