I made this last night with the halved soy sauce recommendation, and it was pretty good.
The sauce is thin if you use the Instant Pot, so I recommend adding in a roux with a tablespoon of cornstarch and using the Saute function to boil and thicken the sauce.Made this last night in my Dutch oven, used rice wine vinegar since that’s what I had on hand. And based on other comments cut soy to 1/3 cup and did rest water. It was really good, whole family liked it.
