Higher gluten intake was associated with a 6.1% increased risk of celiac disease autoimmunity, an immunological response to gluten, and a 7.

It's estimated to affect about 1 in 100 people worldwide, and more than 2 million people might not even know they have it, according to the Celiac Disease Foundation. Gluten intake is considered to be a factor in developing celiac disease, but according to Tuesday's study, quantity plays a major role, too.
