Combine Roasted and Raw Vegetables
My dad thinks salad on a holiday table for a crowd is ridiculous. He has a point—it can wilt before you even get your hands on it, and greens can have a hard time holding a candle to an impressive beef roast or some addictive roasted potatoes. But that plate of meat and potatoes would be awfully boring without something fresh and zesty and bright to balance out all that rich protein and starch.
