When you cook salmon on a cedar plank on a grill, you're actually steaming it, gently. The moisture in the wood heats up and releases steam, cooking the fish while simultaneously imparting smoky, woody flavors without the harshness of direct flame contact. The salmon is done when the internal temperature registers 145°F.
