A pastry chef from Beatrix, which has locations in Streeterville, the Loop, River North, Oak Brook and more, shared a cake recipe Thursday.1. Preheat the oven to 300F.

3. Separate the egg yolks into a medium mixing bowl, and the egg whites into the bowl of a stand mixer . 5. Whip the egg whites on low speed until soft peaks form. Slowly add the remaining sugar until medium peaks have formed. 7. Give the mixture several folds with a rubber spatula, then add the peaked egg whites and continue to fold until incorporated.9. Bake for 45 minutes. Rotate pan and bake for another 15 minutes. Cake will rise in height and then collapse slightly.1. In a small bowl, mix together the granulated sugar and kappa carrageenan and set aside.
