'I highly recommend you look up Gianna in Lecce'

Full Screen is not supported on this browser version.But before we could start cooking, we had to walk to the local market to choose and buy the vegetables, seafood and meat we were going to use for our meal. So off we went to the market while Gianna gave us a history lesson on Lecce and Puglia.

We started by making the focaccia bread so it could bake while we made the rest of the meal. We each got to make our own little piece of dough. Gianna could tell just from looking at it whether it needed more flour or water. She then combined each of our doughs and finished kneading it to the correct consistency. She added the tomatoes, rosemary and salt and put it into a glass bowl. If you want to know the secret to the most delicious focaccia bread it is two words: olive oil, and lots of it.

Gianna told us why we were preparing each dish the way we were, different ways of preparing the dish, and how much of what she was showing us she learned from her mother and grandmother.Article content
